What is Mee Goreng?
Mee Goreng is a popular noodle dish that originates from Indonesia. It's made of thick yellow noodles with pork belly, shrimp, fish cakes, garlic chives and crunchy beansprouts stir fried in an umami, savory, sweet sauce. These noodles are usually served at many Indonesian restaurants or Indonesian food stands. Mee goreng noodles are so popular that they have spread to Malaysia, Singapore and Brunei. It's become so iconic that there are even instant noodles of this South-East Asian noodle dish. What I love most about these delicious noodles is the tangy savoury flavour thanks to the sauce. The sauce is made with sweet soy sauce, ketchup, dark soy sauce and oyster sauce. In Indonesia, they use tomato sauce or ketchup in their dish to add a sweet tangy flavor.
This is a great noodle recipe for busy weeknight meals for the whole family to enjoy as a main dish. You can easily swap out the protein for one that you enjoy if you wish. I usually ordered this tasty dish at my favourite local Malaysia restaurant but some days when I really don't feel like heading out, I'll make this dish at home.
Ingredients

- Thick egg noodles: or any thick wheat flour noodles like udon noodles
- Pork belly: or substitute with chicken, beef, pork, or tofu
- Fish cakes: or substitute with fish balls or omit altogether
- Shrimp: jumbo shrimp is recommended
- Garlic
- Eggs
- Chinese chives aka garlic chives: or substitute with any Asian leafy greens of your choices
- Bean sprouts: mung bean sprouts or soy bean sprouts both work
Mee Goreng Noodle sauce
- Kecap Manis aka Sweet soy sauce: or sub with dark soy sauce and add sugar to taste.
- Sesame oil
- Ketchup
- Oyster sauce: or vegetarian stir fry sauce
Note: Your Asian grocery store will carry most of the Asian specific ingredients.
How to make Mee Goreng
Blanch Noodles
In a large pot filled with boiling hot water, blanch your noodles just until loosened (20 seconds) and strain immediately. Do not over soak them as they will become soggy. Set aside.
Create Sauce
Then in a small bowl, combine noodle sauce ingredients.
Fry Pork Belly
In a large pan on medium heat, fry pork belly until golden crispy brown, about 5 minutes.
Sauté Garlic
Next add garlic and let this saute until soft.
Add Shrimp & Fish Cakes
Toss in shrimp, fish cakes and let this fry until the shrimps become mostly pink.
Add Eggs
Sweep your ingredients to the side of the pan. Pour in whisked eggs and mix with the other ingredients.
Add Vegetables
Throw in chives and bean sprouts and cook until the veggies have wilted a bit.
Toss in Noodles & Sauce
Add noodles with noodle sauce.
Mix until Combined
Toss until everything is well combined. Transfer to the serving plate and enjoy!
Storage & Reheating
This dish will last up to 4 days stored in an airtight container in the fridge. To reheat, microwave for 2-3 minutes or reheat on the stovetop in a pan on medium heat until hot.
Expert Tips
- Do not over blanch your noodles. Just blanch until loosened and strain immediately.
- Do not overcook the shrimp and fish cakes.
- Remove off heat after tossing the noodles with other ingredients.

Quick & Easy Mee Goreng
Ingredients
- 400 grams egg noodles thick kind
- ¾ cup pork belly sliced into smaller pieces
- 1 cup fish cakes sliced
- 1 cup shrimp peeled and deveined
- ½ tablespoon garlic minced
- 2 eggs beaten
- 2 cups Chinese chives chopped into 1-inch segments
- 2-3 cups Bean sprouts washed and strained
Mee Goreng Noodle sauce:
- 3 tablespoon kecap manis or sweet soy sauce (or substitute with dark soy sauce and add 2 teaspoon of sugar)
- 2 teaspoon Sesame oil
- 5 tablespoon Ketchup
- 2 tablespoon Oyster sauce
