Toasted Ciabatta with Roasted Garlic-Thyme Butter

Ingredients

  • 2 heads garlic
  • 1 Tbsp olive oil
  • ½ cup butter, softened
  • 1 Tbsp minced fresh thyme
  • 1 (10-oz) loaf ciabatta bread

Instructions

  1. Preheat oven to 425°F. Remove paper layers on outside of garlic heads, keeping heads intact. Cut top ¼-inch of each head of garlic, to expose cloves.
  2. Place garlic heads, cut sides up on a 10-inch foil square; drizzle with oil, and fold edges of foil over garlic to completely enclose. Bake 40 minutes or until garlic is very tender. Let cool, and gently squeeze garlic cloves from heads into a medium bowl.
  3. Add butter and thyme to garlic; stir to combine.
  4. Meanwhile, cut ciabatta in half lengthwise. Place bread cut sides up on a baking sheet, and bake 10 minutes or until toasted. Slice, and serve with Roasted Garlic-Thyme Butter.
