Seven "Rice" Samurai - ecology


From the seedling to the grain, rice is
an amazing ecological resource. That
was Mitsunoris message in creating
this sushi, for which he performed
seven tricks on rice fermenting, deepfrying, grilling, roasting, boiling, freezing
and extracting. The diverse array of
textures and tastes in this visionary
piece meant that one mouthful was
enough to convince any doubters that
even sushi made from just rice could
still deliver a veritable taste explosion.

work cut out for them. The Samurai
only have a single mouthful to convince
guests that theirs is the standout sushi
so diverse elements such as flavour, taste,
aroma, colour, presentation, and culinary
concept have to be communicated
in a compact yet compelling package.
The natural limitations of the cuisine

make it all the more amazing that


participating chefs are able to evoke
so much through so little. The awards
have also served to break down some
of the more common misconceptions
about sushi for the past two years,
vegetarian, ecologically-friendly sushi
have triumphed, demonstrating just how
ground-breaking these awards really are.
Each year, the task of the celebrity judging
panel and gathered sushi enthusiasts
gets harder as the overall standard of
sushi continues to rise, and, accordingly,

the chefs themselves must go to even


further lengths in order to capture the
hearts and the votes of their discerning
and diverse audience. Superlative knife
skills, outstanding creativity, pioneering

she is to triumph as the 2009 champion.
It is little surprise, then, that the seven
sushi chefs chosen as the Samurai
must not only be brimming with
experience and talent, but also abreast

for themselves not only through their
diligence and culinary innovation,
but also through success earned
after their participation in national or
international sushi competitions. It is
this combination of technical brilliance
with phenomenal innovativeness in the
Samurai which makes their craft such a
joy to behold and, of course, to taste
at close proximity.

featured the first ever Japan Day,
with soba noodle-making and sushi
demonstrations, cookery classes, tea

Okomesan
Today many kinds of rice are used in Italy, but until the 1950s
short grain rice was the main variety grown. In 1980, Morimoto
began researching why this rice differed from that grown in
Japan. In 2002, a variety of rice perfectly suited to Japanese
cuisine was identified and trademarked as Okomesan. Japanese
rice-polishing machines give Okomesan a delicious, just-polished
flavour. Brown rice (Kogane) and mochigome rice (Mochicco)
varieties are also available, and can be exported to all parts of
Europe.

Tamaki sake is an exquisitely full-bodied yet mellow tasting


blend made by the Akita Seishu brewery, a 140 year old family
owned company from Akita in the north of Japan. Tamaki
sake is junmai, meaning that it is pure rice sake with no sugar
or alcohol added. Its only ingredients are naturally grown,
chemical-free rice and the soft snow melt water from the
nearby spring. Akitas pure mountain air and cold winters create

Founded in 1922, this brewery is situated at the foot of Mount


Hakkai in Niigata and uses spring water that flows from the
mountain to produce its sake. The guiding principles of the
brewery are to produce the finest light sake that people will
never tire of and to apply the highest standards of daiginjo
production to all its sake. In order to achieve the smooth and
wonderfully pure and mellow flavours of Hakkaisan's sake, the
brewery insists on producing in small batches, using hand-made
koji mould and slow fermentation at low temperatures.

Chikurin sake is made from rice that has gone through a unique
process called sano: the rice is left to wither 3 times before
harvesting, producing first-class sake rice. The brewery is located
within an officially designated sake rice-growing region, and was
the first to be fully organic in its production. There are four blends,
the most recent of which is Organic Chikurin Karoyaka. This sake,
which has a lovely soft finish on the palate, was the first blend
developed after the brewery achieved full organic accreditation in
2007, and in 2009 achieved USDA NOP accreditation.

Tengumai sake has been in production at the Shata brewery in


Ishikawa for over 180 years. The Shata brewery has received
multiple gold awards in the prestigious National New Sake Tasting

Craftsman. His particular expertise lies in the yamahai brewing
technique, where sake is left to ferment slowly. The extensive range
of yamahai-brewed sake includes Yamahai Junmai Ginjo, a beautiful

Junmaishu, a well-balanced brew with a distinctive acidity.

Urakasumi Sake
Both soft, refreshing Junmai Urakasumi and the light, crisp
Junmai Ginjo Urakasumi Zen (premium sake where the rice has
been highly polished) are brewed slowly at low temperatures,

Ichibanfuda (middle), which means number one card in


Japanese and is considered auspicious, is a premium shochu
made from selected barley and pure water, distilled in timehonoured fashion and matured in oak casks. It is very smooth,
and is great infused with herbs or fruit, or mixed in cocktails.
Also available are Satsumatsukasa (left), made from sweet
potato which, like Ichibanfuda, has an alcohol content of 25%,
and Ichibanfuda Shiso (right), a beautiful pale pink shochu
flavoured with the Japanese herb perilla (20% abv).

Ryukyu Awamori Zuisen

Shochu is a traditional Japanese distilled beverage which


has steadily grown in popularity since the 1990s. Gekkeikan
specialises in rice-based shochu and has developed a production
method based on low temperature fermentation, distillation and
aging, resulting in a soft and fruity character. Gekkeikan's finest
shochu includes the rich Bizan Gold, which blends oak barrelaged shochu with fresh shochu. Bizan Super has a complex,
refreshing flavour, with sake lees from ginjo sake added during
the fermentation process. Sake lees are also added to Bizan
Clear, which is light and easy to drink.

Awamori is the oldest distilled spirit in Japan, and the method


used by Zuisen to make it has remained essentially unchanged
for 600 years. Rice on which the koji mould has been grown
and water are the sole ingredients used, with the natural
distillation process giving this fine awamori its refreshingly
sharp edge, fragrant aroma and rich, deep flavour. Once prized
by the lords of Shuri Castle, awamori was only allowed to
be produced in the nearby town. The Zuisen distillery is still
located there and strives to keep this deeply historic taste alive.

A new sparkling wine is born: made only from rice, its natural
fermentation produces a pleasant and refreshing tartness similar
to lemonade. Pop open a bottle of naturally carbonated Hou
Hou Shu to reveal its gentle champagne-like bubbles and the
delicate sweetness of the rice. It is also a perfect match for tart

Prefecture, where over 45% of Japanese green tea leaves are
produced. Sasaki has 87 years of history and manages 500 acres of
